Ube Champorado Recipe

It's a long weekend and we figured that we need a treat from all the work we've done this week.

This is NOT your typical champorado. We swap out the classic chocolate for sweet, earthy ube -- ideal for breakfast/snack or as dessert!

You better try this Ube Champorado for you and your family because it really is yummy!!

Ube Champorado

  • 2 cups Glutinous Rice/ Malagkit Rice
  • 6 cups water
  • 2 tbsp Ube Liquid Flavor
  • 3/4 can Jersey Ube - Flavored Condensed
  • 1 cup Evaporated Milk

  • Powdered Buttermilk
  • You may also use grated cheese!
You can get all ingredients here

    1. In a pot over high heat, bring 6 cups of water to boil. Add 2 cups of glutinous rice and let it cook, stirring from time to time.
    2. Pour the Ube Liquid Flavor into the pot and continue to cook until it gets thicker. Turn heat to medium-low. Add the Ube - Flavored Condensed and Evaporated Milk  then stir occasionally to prevent the rice from sticking at the bottom of the pot. Add more water if it gets too thick and the rice is not yet done.
    3. Remove from heat once the glutinous rice is done cooking and the desired consistency is achieved.
    4. Serve Ube Champorado in bowls while still warm dusted with powdered milk/ grated cheese on top.

Note that the glutinous rice will continue to expand and absorb the liquid even after cooking.

I did not add any sugar because the Ube - Flavored Condensed is sweet enough for my liking. You can always add more ube flavoring and sweetener at the end until it matches your preference.
